|1 tortilla, cut into bits|
1/2 onion, chopped
1/2 green pepper, chopped
1tbsp olive oil
1 jalepeno, chopped
1 tomato, chopped
60g cheddar, grated
|Bake tortilla bits until golden|
Whisk eggs, milk and paprika.
Fry onion and peppers for 5mins, add jalepeno, tomato and tortilla bits.
Reduce heat, fold in eggs and cook.
Serve topped with cheese
